Roasted Swedes, Fennel & Macadamia Nut Salad

A super easy warm winter vegetable salad which works perfectly as a main or a as a side.

Roasted Swedes, Fennel & Macadamia Nut Salad


  • 700g swedes
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cumin
  • ¼ teaspoon Ginger powder
  • ¼ teaspoon salt
  • 7 garlic cloves – peeled
  • ½ cup roasted macadamia
  • 1 large Fennel bulb
  • 2 tablespoon chopped parsley
  • 3 tablespoon Extra Virgin Olive Oil
  • 2 Tablespoon Lemon juice
  • Salt & Pepper to taste


  1. Cut swedes in half and then into thick slices, coat with olive oil, spices and salt and roast till golden brown with the garlic (about 40 minutes on 180 c deg)
  2. While roasting, thinly slice Fennel and chop parsley.
  3. When swedes and garlic are ready, toss them with fennel and parsley, Olive Oil and lemon juice.
  4. Season to taste.
