Roasted Swedes, Fennel & Macadamia Nut Salad
Ingredients
- 700g swedes
- ¼ teaspoon cinnamon
- ¼ teaspoon cumin
- ¼ teaspoon Ginger powder
- ¼ teaspoon salt
- 7 garlic cloves – peeled
- ½ cup roasted macadamia
- 1 large Fennel bulb
- 2 tablespoon chopped parsley
- 3 tablespoon Extra Virgin Olive Oil
- 2 Tablespoon Lemon juice
- Salt & Pepper to taste
Method
- Cut swedes in half and then into thick slices, coat with olive oil, spices and salt and roast till golden brown with the garlic (about 40 minutes on 180 c deg)
- While roasting, thinly slice Fennel and chop parsley.
- When swedes and garlic are ready, toss them with fennel and parsley, Olive Oil and lemon juice.
- Season to taste.
