After growing via a farm gate for two years Mushroom Forestry was launched in July 2018 by Dave & Sam. They focus their efforts solely on growing the highest quality, organic fresh mushrooms.
Growing mushrooms is a dream come true for Sam & Dave. It is their combined skills, talent and love for the humble shroom that drove them into the journey of Fungi farming.
Sam has held a long interest in growing and working with Fungi ever since her studies of Bachelor of Biological science in her 20’s. Throughout her career Sam have combined her science skills and knowledge with her love of gardening and horticulture, which now expressed through Mushroom Forestry. Dave has a long standing career as a Chef, passionately supporting local producers and growers for his ingredients, and now… he is one (grower… not ingredient).
The pair have embarked into a journey combining their collective skills to pursue Mushroom Forestry on the Mornington Peninsula.
Differently to most gourmet mushroom farms, Mushroom Forestry truly grows their fungi seasonally and organically! They built their farm within a cool-store with thick, insulated walls. The internal temperature naturally fluctuates throughout the year, ranging from lows of 12 degrees in Winter to 25 degrees in Summer. As the temperature changes through the seasons they bring in and phase out mushroom varieties according to their ideal growing temperatures.
In 2019, Mushroom Forestry’s Shiitakes were recognised as Gold Medalist in the Delicious Produce Awards.
