Silverbeet, Rice & Feta Fritters
Ingredients:
- 2 cups cooked brown rice
- 2 red onion – sautéed till lightly coloured
- 200g Silverbeet – finely slivered and chopped
- 4 eggs – whisked (I always use Yolky Dokey)
- 180g Fetta – crumbled
- 1/3 cup chopped Dill (or more if you’d like)
- 2-3 Tablespoons Plain Flour
- 1 teaspoon Salt
- 1/4 teaspoon dry Mint
- 1 Lemon – juiced
Method:
- Mix all ingredients together and fry up (a tablespoon size) in small batches.Gobble up with yoghurt, Tzatziki or any dip or no dip.
