Fennel, Blood Orange & Chickpea Salad
Ingredients
- Chickpea Tin – rinsed and drained
- 1-2 Fennel – Thinly sliced (fronds too)
- 1.5 Blood Orange – Thinly sliced into circles (or smaller )
- 1/2 cup Walnuts – (I like it raw but you can roast if you want)
- 1/4 cup Parsley – roughly chopped
For the dressing whisk together :
- 0.5 Blood Orange – juiced
- 1 Tablespoon White Wine Vinegar
- 4 Tablespoon Extra Virgin Olive Oil
- Salt & Pepper to taste
Method
Mix all veg together, toss through dressing and serve. Store today.
