Fennel, Blood Orange & Chickpea Salad

It is BBQ weather so call your loved ones and invite them over for a #Zoom #BBQ while the sun is bright and glorious. To match the sunshine, I've got a couple of salads that are bright yet wintry for you to enjoy this weekend.

Fennel, Blood Orange & Chickpea Salad

Ingredients

  • Chickpea Tin – rinsed and drained
  • 1-2 Fennel – Thinly sliced (fronds too)
  • 1.5 Blood Orange – Thinly sliced into circles (or smaller )
  • 1/2 cup Walnuts – (I like it raw but you can roast if you want)
  • 1/4 cup Parsley – roughly chopped

For the dressing whisk together :

  1. 0.5 Blood Orange – juiced
  2. 1 Tablespoon White Wine Vinegar
  3. 4 Tablespoon Extra Virgin Olive Oil
  4. Salt & Pepper to taste

Method

Mix all veg together, toss through dressing and serve. Store today.
